      Mole enchiladas are a favorite in Mexican

      cuisine with many regional varieties. Amy's version uses a special blend of dried chiles, organic roasted pumpkin seeds, cashews, almonds, bittersweet chocolate

      and warming spices. For this entrée we start with fresh house-made organic corn

      tortillas and fill them with organic zucchini, carrots, onions, and a delicious

      blend of Monterey Jack and white Cheddar cheese then top it all with our richly

      layered mole sauce that's savory and sweet with just a hint of heat. Warm and

      comforting, you’ll love this addition to Amy’s family of enchiladas.

      Directions

      <p><b>Microwave Oven</b>&nbsp;Make a 1-inch slit in overwrap. Cook on MEDIUM for 5 minutes. Remove overwrap. Cook on HIGH for 1-2 minutes. Let sit 1 minute. Serve.</p> <strong>Conventional Oven</strong> Preheat oven to 400°F. Remove overwrap. Cover tray with foil and place on a baking sheet. Bake for 40 to 45 minutes. Let sit 1 minute. Serve.<br>

      <p><strong>Toaster Oven</strong> Remove overwrap and tray. Place in an oven-safe dish. Follow conventional oven directions.</p>
